Guyanese Swank (Lime Water)

Nothing beats a cold glass of homemade Swank on a hot Guyanese day. Sweetened with rich brown sugar and brightened with the fresh juice of limes or lemons, this timeless drink has been refreshing generations of Guyanese for decades. Whether you enjoy it with a splash of vanilla essence, a little citrus pulp, or simply poured over plenty of ice, Swank is more than just a drink—it's a taste of home in every glass

Ingredients
  

  • 6 –8 fresh limes or 4–5 lemons, juiced
  • 2 cups brown sugar adjust to taste
  • 8 cups cold water
  • 1 teaspoon vanilla essence optional, but traditional in many Guyanese homes
  • Ice cubes
  • Lime or lemon slices for garnish optional

Method
 

  1. Juice the limes or lemons, removing any seeds.
  2. In a large pitcher, dissolve the brown sugar in a small amount of warm water or stir vigorously into the citrus juice until completely dissolved.
  3. Add the lime or lemon juice to the pitcher.
  4. Pour in the remaining cold water and stir well.
  5. Add the vanilla essence, if using, and mix.
  6. Taste and adjust. Add more brown sugar if it's too tart, or more citrus juice if you prefer a sharper flavour.
  7. Chill in the refrigerator for at least 1 hour.
  8. Serve over plenty of ice.

Notes

Authentic Guyanese Swank gets its distinctive colour from brown sugar. White sugar may produce a refreshing citrus drink, but it won't have the rich amber hue or the deeper flavour that generations of Guyanese associate with true Swank.
Many Guyanese families also have their own traditions:
  • Leave a little pulp for a rustic, homemade taste.
  • Strain the juice for a smoother finish.
  • Add a splash of vanilla essence to enhance the taste and aroma.
  • Chill the Swank first, then pour it over ice for the coldest, most refreshing glass.
