Conkie

Wrapped in fragrant banana leaves and gently steamed, Conkie is one of Guyana's most treasured traditional desserts. Made with cornmeal, grated coconut, sweet potato or pumpkin, raisins, warm spices, and brown sugar, each parcel is rich, moist, and filled with comforting flavours. While Conkie is enjoyed throughout the Caribbean, Guyana's version has become a cherished part of the nation's culinary heritage. It is especially popular during Emancipation Day celebrations, when families gather to prepare and share this beloved treat. More than just a dessert, Conkie is a symbol of tradition, community, and the enduring legacy of African culture in Guyana.

Ingredients
  

  • 1 cup cornmeal
  • 1 1/2 cups pumpkin puree or grated pumpkin
  • 1 cup freshly grated coconut
  • 1 stick = 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp ground cinnamon
  • 1/2 tsp grated nutmeg
  • 1/2 tsp ground ginger
  • 1 tbsp vanilla
  • banana leaves
  • cooking twine
  • foil wrap optional
