Pine Tart

A pine tart is a traditional Guyanese pastry made with a buttery, flaky shortcrust pastry filled with a sweet pineapple jam. The pineapple is typically grated and slowly cooked with sugar, spices such as cinnamon, and sometimes cloves or ginger until it becomes thick and flavorful. The pastry is folded into a distinctive rectangular or triangular shape, sealed, and baked until golden brown.

Ingredients
  

  • 2 cups pinapple chunks
  • 2 cups pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp almond extract
  • 1 tbsp vanilla extract
  • FOR PASTRY DOUGH
  • 2 1/2 cups all purpose flour
  • 1/2 cup butter
  • 1/2 cup shortening
  • 1 tsp.salt
  • 1 tbsp sugar
  • ice water
  • 1 egg for basting
