Baiganee

Crispy on the outside and tender on the inside, Baiganee is one of Guyana's most popular street foods and a beloved snack with roots in the country's East Indian heritage. Slices of eggplant are dipped in a lightly seasoned split pea flour batter infused with turmeric, garlic, cumin, and fresh herbs before being fried to golden perfection. Traditionally served with tangy mango sour, tamarind chutney, or a spicy pepper sauce, Baiganee is enjoyed at markets, roadside stalls, family gatherings, and celebrations across Guyana. Simple yet bursting with flavour, it is a delicious example of how the traditions brought by Indian indentured immigrants have become an essential part of Guyana's rich and diverse culinary identity.

Ingredients
  

  • 1/2 cup Besan or Pholourie flour Besan is an alternative option, you can use plain flour of Pholourie mix
  • 1 1/2 cups self rising flour
  • 1/2 tbsp turmeric
  • 1/2 tbsp curry powder
  • 2-3 tbsp green seasoning onion and garlic included
  • 4-5 stalks green onion chives (shallot)
  • 1 tsp salt or to taste
  • Black pepper optional
  • All purpose seasoning optional

Method
 

  1. Instructional Video
  2. Add all dry ingredients to a mixing bowl and combine. Add green seasoning and green onion and mix. Add water gradually until desired batter consistency.
  3. Set aside and cut eggplant/baigan into 1/4 inch thickness. Salt method is optional.
  4. Sip into batter and fry on medium heat for about 1-2 mins per side.
  5. Remove, drain and serve hot.
  6. Enjoy with your favorite chutney, pepper sauce, achar or sour
