- Add all dry ingredients to a mixing bowl and combine. Add green seasoning and green onion and mix. Add water gradually until desired batter consistency.
- Set aside and cut eggplant/baigan into 1/4 inch thickness. Salt method is optional.
- Sip into batter and fry on medium heat for about 1-2 mins per side.
- Remove, drain and serve hot.
- Enjoy with your favorite chutney, pepper sauce, achar or sour
